I've always been a fan of the caprese—in salad form and on good Italian bread. My mom and I used to pick up a loaf of ciabatta or a baguette at the store and bring it home for "dipping"—mixing olive oil with balsamic vinegar or parmesan, salt, and pepper. I still like doing that after a long day—the best food is the kind attached to a memory! This dinner is SO quick and simple—it honestly takes under ten minutes start to finish.
Honestly, the only real steps are to preheat the oven and slice up all the ingredients. I used wheat levain bread (but rye, ciabatta, foccacia, or baguette bread all works too!), herbed goat cheese, tomatoes on-vine, basil, and avocado. The avocado is definitely optional, especially when it's not in season.
First, spread olive oil on the bread (while preheating the oven). Don't completely drench it—just enough to crisp the bread in the oven. Slice/crumble the goat cheese and top the bread with it.
Pop into the oven for about three minutes. Spread the goat cheese around—it'll be super smushy now.
Top with tomatoes, basil, and avocado (if you want!).
