Though I've resisted decorating for Christmas out of stress and the need to make these cold (dare I say bleak?) days a little more joyful, I can't stop myself from starting to test holiday baked goods out.
Snickerdoodles are long-time family favorite in the DeBoest household, so it was only natural that Riley and I would make these on a chilly night in (catching up on Gilmore Girls, of course).
One-bowl dessert recipes with <10 ingredients are my jam. These took just over half an hour to make, and they're a hit. Promise.
1 1/2 sticks unsalted butter, softened
1 cup sugar
1/2 cup brown sugar
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
cinnamon sugar, for sprinkling
1. preheat oven to 350ºF. grease an 8x11 pan with cooking spray.
2. beat butter and sugars until fluffy. add eggs and vanilla and beat until combined.
3. add flour, salt, baking soda, and cinnamon to wet ingredients and beat until just combined.
4. transfer batter to pan. sprinkle top with cinnamon-sugar. bake for 25-30 minutes. let cool.
