OPEN FACED CAPRESE SANDWICHES + LIFE LATELY
What a crazy spring it's been so far! I'm so sorry for the radio silence over here on Sunny Side Up — I started in a new role on the PR/social media team over at Trilix last month and it's been busy, busy, busy. A new job, a crazy pup, and plenty of gorgeous weather means Jordan and I have been surviving on easy dinners and little sleep. Without further ado — here's a mini-recipe and a few life updates.
To make these easy open-faced sandwiches for lunch or dinner (they pair really nicely with a crisp chilled white wine or even rosé!), brush slices of sourdough bread with olive oil, cover with slices of mozzarella, and bake 5 minutes. Top with sea salt, cracked pepper, sliced tomato, and torn basil.
We love wasting away a weekend afternoon by touring the newest breweries in DSM. Our current favorite is the Peace Tree Des Moines Branch — try the blueberry gose! In the next few weeks, we hope to try a few of the breweries located further out of downtown Des Moines, like Firetrucker, Barn Town, and Twisted Vine.
Another DSM staple for breakfast and lunch? La Mie. I always get the omelet with a huge side salad, but their sandwiches and quiches (and soups, and ...) are all to-die-for. The long line winding around the restaurant goes fast and the smells of freshly baked bread and good coffee make it worth it.
We're moving! This summer, we're moving away from the north Des Moines/Windsor Heights area to come a little closer to downtown. We can't wait to live in the Ingersoll area and to be near delicious restaurants, work, the farmer's market, and local coffee shops (no offense, Starbs).
And when we move, we're taking both of our MAJOR ADULT PURCHASES with us — Wilbur and this gorgeous sectional we bought this spring! It's the comfiest thing ever and has contributed to some insanely long Netflix binges already.
